First of all Nick, welcome to the site.
As you said, the Sopcast streams are normally decent quality and unlikely to get taken down for copyright reasons. YES, ALV, BLOODZEED, DIGISPORT and DERBY HD are the ones I normally go for first, if online.
P2P streams like Sopcast depend on having a lot of viewers, especially with decent upload speeds, as we are all 'transmitting' to other users as well as receiving the streams. Unfortunately, the P2P streams are further behind 'live' than the browser streams. Another thing that I do is watch Sopcast via VLC player as the output is a lot more steady.
Of the browser streams, Veetle is normally the best. VIP TV/MAGIC and KIWI/NORWAYSPORTZ tend to use this platform. Unfortunately the streams tend to be taken down quite often but they are normally pretty quick at getting a fresh stream running.
For Rangers or Celtic games that aren't on TV anywhere in the world, FIRST ROW and VIP BOX are the best bet. They have access to Rangers TV and Channel 67 streams. These are internet/non-UK/pay streams which are 're-streamed' so the quality isn't always the best but it is better than a poke in the eye with a sharp stick.
