I've recently switched from Firefox to Google Chrome, never thought I'd ever say that FF was laggy, but compared to Chrome it's so slow.

Here's a little game for you, open your task manager (ctrl, alt, del) and click the processes tab. Then load up chrome and FF together and check out the difference in memory usage.
Chrome is phenomenal!

I thought I'd miss my plethora (love that word) of add-ons, but I really don't. Go on...

Chrome is good but Opera is the equal in speed, has better performance stats, and has built in stuff that i use all the time like 'copy to note' 'paste and go' etc

FUCK ME! Firefox recently updated and since then its been a complete fucking nightmare. It can sometimes take 3 attempts to even get it going.
Seems to be anything to do with flash videos, or java applets - which as you can image, is the majority of websites.

Does Chrome take a lot of setting up? I am reluctant to change over as Google has a habit of taking over control of everything if allowed to. Any advice is welcome

Its pretty simple, nothing much needs to be changed - its pretty similar to Safari if that helps?
